Chery Sorbet

(Serves 4)

Cherries are such a delight in the summer. I particularly love the Rainier cherries, but any cherries make me happy in their short season. As I have continued the quest for the perfect summer dessert – this is one of our favorites. The cherries are so sweet and full of flavor, they make the most refreshingly delicious frozen treat. If you are pressed for time or cherry season has passed, frozen cherries work perfectly in this recipe and cut down the prep time significantly since they come out of the bag already pitted. My favorite thing about this recipe is that this sorbet turns out perfectly soft and scoopable straight from the freezer.

You Will Need:

  • 1 pound sweet cherries, pitted
  • Juice of half a lemon
  • ½ cup water
  • 1/3 cup granulated sugar
  • ¼ teaspoon cherry extract, I like this one (paid Link)
  • ½ teaspoon almond extract 
  • Kosher salt

Instructions:

  • Place the water, sugar, cherries, lemon juice, and a small pinch of salt in a saucepan.
  • Bring to a boil, then reduce the heat to low and let simmer for 15 minutes. Remove from heat and let cool to room temperature.
  • Add the extracts and puree the mixture in a blender until smooth.
  • Chill thoroughly in the refrigerator, overnight or at least several hours.
  • Freeze the mixture in an ice cream maker following the manufacturer’s instructions. I use this one.
  • Serve straight from the machine or put in a container and freeze for later.
