Simplest Black Bean Dip

(Serves 6-8)

This dip is something I threw together because I was going to a friend’s house for happy hour. Not sure if everyone’s mother drilled it into them that you can’t show up to someone’s house empty handed for any occasion, but mine really did. With this in the back of my mind and minutes to spare, I made up this bean dip, grabbed a bag of chips and hoped for the best as I headed out the door. Everyone there LOVED it and even asked for the “recipe”. Feeling guilty, I told them the truth about the handful of ingredients I used and that I just microwaved it. A couple of them took out their phones and jotted down the ingredients I listed. It is good, but since it was so simple, I discounted it. Fast forward a few weeks later when my son was STARVING and hangry – I made this again and hoped for the best. He too loved it. My husband tried it and couldn’t stop eating it either. I now make this on the regular and my 7-year-old often requests it. This fast and easy dip is a great snack with chips, but also makes a good topping for quesadillas, or can be rolled into a tortilla for a quick burrito. The dip itself just needs 5 ingredients, and you can garnish it with anything you like (or not at all). I like it with chips and a Paloma. Cheers!

You Will Need:

  • 1 can refried black beans
  • 2 ounces cream cheese
  • 1/3 cup grated sharp cheddar cheese
  • The juice of 1 lime
  • 2 teaspoons of Mexican or taco seasoning
  • Kosher salt – see note
  • Optional toppings – sour cream, cilantro, tomatoes, avocado, etc.
  • Tortilla chips, for serving

Instructions:

  • Place all ingredients in a microwave safe bowl.
  • Microwave on high for 2 minutes, until all the cheese is melted.
  • Stir until smooth. Microwave for another 30 seconds to 1 minute to heat through. Stir once more before serving.
  • Garnish with your favorite toppings if desired; sour cream, cilantro, tomatoes, avocado, etc.

NOTE – check the label of your seasoning blend, as some contain salt and some don’t. If your seasoning has salt, taste before adding as you may want to skip the added salt.
