Slow Cooker Garlic Ginger Chicken

Fall in love with this Slow Cooker Garlic Ginger Chicken! It’s an easy, healthy crockpot dinner your whole family will love. With just a few simple ingredients, this flavorful dish comes together effortlessly and makes your house smell amazing as it cooks. Tender chicken thighs simmer in a sweet and savory mix of brown sugar, fresh garlic, and ginger for a comforting meal that’s perfect for busy weeknights. One of my family’s all-time favorites, this recipe is simple to scale up for guests, and the best part is the measurements don’t need to be exact. The fresh garlic and ginger really make all the difference in this dish!

You Will Need:

  • 1 ¼ – 1 ½ pounds boneless, skinless chicken thighs
  • ¾ – 1 cup brown sugar
  • 4 cloves garlic – See notes
  • 1 inch piece of fresh ginger – see notes
  • About 2 teaspoons of dark sesame oil
  • Kosher salt and freshly ground black pepper
  • Rice, any variety, for serving
  • Fresh broccoli florets, for serving

Instructions:

  • Put the sesame oil in the bottom of the slow cooker, place the chicken on top, and season liberally with salt and pepper.
  • Grate the garlic and ginger using a handheld grater, so there is a smattering over the top of each chicken thigh.
  • Cover the thighs with a thick layer of brown sugar.
  • Cook on low for 3 ½ to 4 hours in the slow cooker.
  • When the chicken is nearly done, cook the rice according to the package instructions and steam the broccoli, following the instructions for your steamer.
  • Serve chicken over rice with broccoli, spooning some of the sauce over the top.

NOTES – I use at least 1 clove of garlic for each piece of chicken, more if the cloves are small. Store the fresh ginger in the freezer, it will grate easier.
