When summer grilling season rolls around, I’m always looking for simple, light side dishes that don’t require a lot of effort but still bring plenty of flavor to the table. This Broccoli Slaw checks all the boxes. This is the easiest side dish, and I mean EASY! It is made with a bag of slaw and a quick lemon-Dijon dressing you can throw together in less than 5 minutes. This recipe requires no actual cooking and won’t heat up your kitchen on a hot day.
One of the best things about this recipe is that it actually gets better as it sits. A few hours in the refrigerator allows the crisp vegetables to soak up all the bright, tangy flavors of the dressing, making it an ideal make-ahead side dish for cookouts, picnics, and busy weeknights. This slaw pairs perfectly with everything from burgers and hot dogs to grilled chicken and barbecue. Simple ingredients, minimal prep, and great flavor, exactly what you need this summer.
You Will Need:
- 16-ounce bag broccoli slaw
- 2 tablespoons chopped fresh parsley
- ½ cup mayonnaise
- Zest and juice of one lemon
- 2 tablespoons Dijon mustard
- 1 clove garlic
- Kosher salt and black pepper
Instructions:
- Place the mayo and mustard into a small bowl (or measuring cup).
- Zest the lemon and grate the garlic with a handheld grater. Add to the bowl.
- Add the juice of the lemon to the bowl and season with salt and pepper.
- Whisk until the dressing is smooth.
- Place the broccoli slaw and parsley into a mixing bowl.
- Pour the dressing over the top and stir until everything is combined.
- Season the slaw with salt and pepper and stir again.
- Cover and refrigerate for at least a few hours or overnight.
- Stir and taste for seasoning, transfer to a serving bowl, and enjoy!
Notes:
If you like an oniony flavor, try adding some scallions or chives along with or in place of the parsley.
