Garlicky Green Bean Foil Pack

(Serves 4-6)

With summer grilling season in full swing, we all need easy side dishes that don’t require extra time in the kitchen. These Garlicky Green Bean Foil Packs are one of my favorite make-ahead grilling recipes because they come together in minutes and can be prepped up to two days in advance. Fresh green beans are lightly blanched, tossed with garlic, butter, and olive oil, then sealed in a foil packet and heated on the grill until perfectly tender and flavorful. Finished with a sprinkle of fresh lemon zest, this simple side dish pairs beautifully with burgers, steaks, chicken, pork, or any of your favorite grilled dinners.

You Will Need:

  • 12 ounces green beans
  • 2 tablespoon butter
  • 1 tablespoon olive oil
  • 2 cloves garlic
  • Kosher salt and black pepper
  • Zest of one lemon, for serving

Instructions:

  • Bring a pot of water to a boil, season liberally with salt.
  • While the water boils, wash and trim the green beans, peel and mince the garlic, and set up a large bowl with ice water next to the stove.
  • Blanch the green beans in the boiling water for 2 – 3 minutes. If you prefer your green beans softer, add another minute or two.  
  • Move the green beans from the boiling water to the ice water. Let sit for 2-3 minutes. Drain.
  • Place two pieces of foil about 24” long on the counter, crossing each other so that they form an x.
  • Place the green beans in the center of the foil x. Drizzle with the olive oil and sprinkle the minced garlic over the top. Season with salt and pepper and toss to coat.
  • Cut the 2 tablespoons of butter into a few pieces and place on top of the green beans.
  • Fold up the sides of the foil to form a packet, ensuring that it is sealed.
  • Cook the foil packet on the grill over medium high heat for 3-5 minutes per side until hot and the butter is melted.
  • Carefully open the foil packet, top the green beans with the lemon zest and serve.

To make ahead:

Assemble the foil packet as directed, then refrigerate for up to 2 days before grilling.
