My son and I make ice cream together quite often. It has become one of “our things” and I am always trying to come up with more simple ice cream recipes that we can throw together easily with ingredients I already have on hand. This recipe is my favorite of recipe we have made thus far. It’s chocolatey and rich without being too sweet.
You Will Need:
- 1 Cup Milk
- 1 Cup granulated sugar
- 1/2 cup cocoa powder
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 2 cups heavy cream
- Pinch kosher salt
- Optional – sliced almonds (toasted)
Instructions:
- Whisk sugar, cocoa powder and salt together until uniform. (This helps ensure that the cocoa powder isn’t lumpy before adding the liquids.)
- Add the milk and vanilla and whisk until smooth. Whisk in the cream.
- Refrigerate the mixture for at least 1 hour or overnight.
- Churn in an ice cream maker per the manufacturer instructions.
- The ice cream will be like soft serve right out of the machine but freezes hard.
- Top with sliced almonds, if desired.
Note – This recipe can be simplified to basic chocolate ice cream by omitting the almond extract (replace with vanilla) and almonds.
