Apple, Celery and Chive Salad with Manchego

(Serves 4)

This salad recipe is inspired by a local restaurant that makes the most amazing slaw salad out of apple, chives, and cheese. It is very unusual and refreshing and I must order it every time I go there. As you may know, going out to eat at a “nicer” restaurant can sometimes be a challenge with young children so I don’t get to go as often as I like. In an effort to satisfy my craving, I had to come up with my own version to make at home. This really hits the spot and incorporates all the flavors of the original. The apple cider vinaigrette is amazing – I recommend doubling the recipe and using it on salads all week long.

You Will Need:

Salad:

  • 5 ounces red butter leaf lettuce
  • 3 stalks of celery
  • .5-ounce chives (about ¼ cup chopped)
  • 1 granny smith apple
  • 4 ounces Manchego cheese

Dressing:

  • ¼ cup apple cider vinegar
  • ¼ cup extra virgin olive oil
  • 1 teaspoon maple syrup
  • 1 clove of garlic
  • ¼ teaspoon Dijon mustard
  • ¼ teaspoon Kosher salt
  • Fresh ground pepper

Instructions:

Make the dressing:

  • Grate the garlic into paste using a handheld grater into the bottom of a measuring cup. Add the maple syrup, mustard, vinegar, salt and pepper. Whisk to combine.
  • Add the olive oil into the vinegar mixture in a slow, steady stream – whisking continuously until the dressing is emulsified.

Assemble the salad:

  • Tear the lettuce into bite sized pieces and place in a salad bowl.
  • Thinly slice the celery, chop the chives, and grate the cheese. Grate the apple last (to avoid browning).
  • Arrange the celery, chives, apple, and cheese on top of the lettuce.
  • Drizzle about half of the dressing over the top. Toss and serve immediately with extra dressing.
