Chocolate Dipped Oreo Ice Cream Bites

If you’re looking for a delicious crowd-pleasing treat that looks adorable but is simple to make, these Chocolate Dipped Oreo Ice Cream Bites are about to become your new go-to dessert. They’re the perfect make-ahead mini dessert for holidays, parties, or family dinners. With only a handful of ingredients, minimal prep, and no baking…  You’ll make them all the time.

They can be customized for different occasions with different ice cream flavors and toppings. My family especially likes the peppermint version at Christmas. You can easily multiply the recipe for a large group, only adding a few minutes of prep time. Make a big batch and stash them in the freezer to enjoy whenever the mood strikes.

You Will Need:

  • 10 Oreos
  • Mint chocolate chip ice cream, or any flavor you love – you will need less than a cup for 10 cookies.
  • 1 10-ounce bag dark chocolate melting wafers, I like Ghirardelli
  • Sprinkles or crushed peppermint to top

Instructions:

  • Allow the ice cream to soften at room temperature for a few minutes.
  • Cover a small sheet pan (or plate) with parchment or waxed paper. Place the Oreos on the pan.
  • Using a small tablespoon sized scoop, place a scoop of ice cream on top of each cookie. I use THIS one. If you want them to look fancy, pipe the ice cream onto the top, but you may need to use ice cream without chocolate chips to not clog the dip depending on which one you use.
  • Place the pan in the freezer so the ice cream can completely harden, for about an hour.
  • Melt the chocolate in the microwave according to the package instructions in a 2-cup measuring cup. See note.
  • Once the chocolate is melted, remove the Oreo bites from the freezer and dip in the chocolate. I have found that THIS is the best tool for the job.
  • Working quickly, dip one cookie place back on the parchment covered sheet and top with sprinkles or peppermint. The ice cream causes the chocolate to harden quickly, so you must top each one with sprinkles before moving on to the next cookie.
  • Return to the freezer once all the cookies have been dipped to let the chocolate completely set and the ice cream harden.
  • Place the finished ice cream bites into paper muffin liners and set in a container until serving.
  • Place the bites in paper muffin liners and into a container in the freezer until serving.

Note – The measuring cup is wide enough to flip the cookie over while still being deep enough that the cookie and ice cream can be submerged in chocolate. If you use a wider vessel, you will need more chocolate.
