Spring is finally springing! As the weather warms up and the days get longer, we are always trying to squeeze more into the day. We like to go on a walk or to the park after dinner when we can or just sit outside with a drink and watch the sun set. Along with that come lighter and easier dinners. Like most people, we grill a lot in the summer, so I am always looking for simple side dishes to go with whatever we grill. This side salad couldn’t be easier. I’m talking the no cook, 5 ingredient, one bowl kind of easy recipe that comes together in 5 minutes or less, tastes great and is healthy. It’s refreshing yet satisfying and works well with anything you feel like grilling. It’s a wonderful recipe we make on repeat all spring and summer long.
You Will Need:
- About 12 ounces baby cucumbers
- 2 avocados (medium to large)
- About ½ cup fresh parsley leaves
- Zest of 1 lemon
- Extra virgin olive oil
- Kosher salt and fresh ground pepper
Instructions:
- Slice the cucumbers and place them in a medium bowl.
- Stem the parsley and add the leaves to the bowl.
- Zest the lemon directly into the bowl. Reserve the rest of the lemon for another use.
- Drizzle lightly with olive oil, lightly season with salt and pepper, and toss to mix. The salad should coated but not swimming in olive oil.
- Cube/dice the avocado and add it to the bowl. Lightly season the avocado with a little more salt and gently toss the salad to incorporate.
- Enjoy alongside your favorite grilled meat.
Note – 5 ingredients… I don’t count salt and pepper since everyone has salt and pepper of some kind.
