Dark Chocolate Almond Ice Cream

(Serves 6)

My son and I make ice cream together quite often.  It has become one of “our things” and I am always trying to come up with more simple ice cream recipes that we can throw together easily with ingredients I already have on hand.  This recipe is my favorite of recipe we have made thus far.  It’s chocolatey and rich without being too sweet. 

You Will Need:

  • 1 Cup Milk
  • 1 Cup granulated sugar 
  • 1/2 cup cocoa powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 2 cups heavy cream
  • Pinch kosher salt
  • Optional – sliced almonds (toasted)

Instructions:

  • Whisk sugar, cocoa powder and salt together until uniform.  (This helps ensure that the cocoa powder isn’t lumpy before adding the liquids.) 
  • Add the milk and vanilla and whisk until smooth.  Whisk in the cream. 
  • Refrigerate the mixture for at least 1 hour or overnight. 
  • Churn in an ice cream maker per the manufacturer instructions. 
  • The ice cream will be like soft serve right out of the machine but freezes hard. 
  • Top with sliced almonds, if desired. 

Note – This recipe can be simplified to basic chocolate ice cream by omitting the almond extract (replace with vanilla) and almonds.
