These flatbread pizzas are an easy, super-fast meal with only 4 ingredients; they are ideal for when you don’t have much time. The sweet fig jam, salty cheese, and peppery arugula make the perfect salty and sweet combo. I haven’t met anyone yet that doesn’t like Manchego cheese, and this is such a nice way to use it. You could certainly eat Manchego on a cracker, but when this recipe comes together in less than 15 minutes, why not make a delicious pizza?
You Will Need:
- 14.1 – ounce package flatbread crusts, 2 pieces
- 2 cups grated Manchego cheese (about 6 ounces), plus more for shaving on top
- Fig Spread/Jam, any variety
- About 2 cups of fresh arugula, for topping
Instructions:
- Preheat oven to 400 degrees.
- Meanwhile, grate the Manchego, reserving a small piece to shave over the top after baking.
- Spread a very thin layer of fig jam over the flatbreads, leaving a small border.
- Top each with about a cup of grated cheese.
- Bake directly on the oven rack for 6-8 minutes, until the cheese is melted and the edges are golden brown.
- Remove from oven and top with arugula and Manchego shavings.
- Cut into pieces and serve along with a salad to round out the meal.
Note – if you prefer a softer crust, place on a baking sheet and add a couple of minutes to the baking time.
