Irish Cream Icebox Cake

(Serves 8-10)

This dessert is so simple and so good. Every time I have taken this to a party, the plate is clean, and everyone loves it. It requires just a few ingredients, a little hands-on time, and magic chilling time in the fridge so it is a make-ahead recipe by default. The addition of Irish cream and vanilla bean paste make this easy dessert extra special and suitable for any gathering. You could change out the Irish cream and try coffee or chocolate liqueur instead. You can even use butter waffle cookies, wafers, or of course the traditional graham crackers.  I used cocoa powder as the topping, but I have also topped it with crushed peppermint, sprinkles, and small candies. It can be made in a baking dish, or on a plate or cake stand, whatever you choose.

You Will Need:

  • 1 package dark chocolate pizzelle cookies – I use these: https://amzn.to/3K5g400 – paid link
  • 2 cups heavy cream
  • 2 tablespoons powdered sugar
  • 2 tablespoon Irish cream liqueur
  • 2 teaspoons vanilla bean paste
  • Cocoa powder and/or chocolate shavings, for topping

Instructions:

  • Chill the cream, liqueur, and stand mixer bowl in the freezer for a few minutes.
  • Put the powdered sugar, cream, liqueur, and vanilla into the chilled bowl. Using the whisk attachment, turn the mixer to medium and allow to thicken for a minute or two. Turn the speed to high and whisk until it’s very thick and forms stiff peaks.
  • Spread a small amount of the whipped cream on the bottom of dish or on the plate – to help the bottom layer soften, but also anchor the cookies if using a plate. Put down the first layer of cookies. If using a dish, break the cookies to fit as needed.
  • Spread about 1/3 of the cream on top of the first layer. Repeat with another layer of cookies, then a layer of cream, then cookies, finishing with the last of the whipped cream.
  • Cover with plastic wrap and set in the fridge, let sit for at least 12 hours or overnight.
  • Just before serving, remove plastic and smooth out the cream with the back of a spoon. Sprinkle with cocoa powder and/or chocolate shavings.
