As a born and raised New Yorker, a good bagel is non-negotiable. A sausage egg and cheese on an everything bagel is pure breakfast heaven. When I’m not in New York (which is too often), I miss that savory, salty, everything-seasoned perfection. Living in Colorado means truly great bagels can be hard to come by, so I created this Make Ahead Sausage Egg and Cheese Everything Bagel Casserole to capture all those classic flavors in one easy dish. It’s rich, hearty, and surprisingly forgiving, even average bagels shine here. Best of all, it’s assembled the day before, making it perfect for overnight guests, holidays, or a lazy weekend morning when you want breakfast ready with minimal effort.
You Will Need:
- 6 Everything bagels
- 6 eggs
- 1 cup whole milk
- ½ cup heavy cream
- About ½ pound of cooked breakfast sausage, bulk or links
- ¾ cup shredded cheddar cheese
- About 3 ounces of cream cheese
- About 2 tablespoons chopped chives, plus more for serving
- Kosher salt and black pepper
Instructions:
- Cut the bagels into bite sized pieces. Place in the bottom of a baking pan or casserole dish sprayed with olive oil. For reference, the pan I use is 8” x 12” x 3”.
- Chop the sausage and spread out among the bagels.
- Whisk the eggs, milk, cream, and chives together. Season with salt and pepper and pour over the bagels in the pan.
- Place little pieces of cream cheese around the top, then sprinkle the cheddar cheese all over.
- Cover tightly with foil and place in the fridge overnight.
- In the morning, let the pan come up to room temperature for a little bit, then place in a cold oven, and preheat to 350 degrees.
- Once the oven comes to temperature, bake (covered) for 30-40 minutes until the temperature reaches 165 degrees in the center, the cheese is melted, and the bagels are golden brown on top. Remove the foil in the last few minutes of cooking to let the top brown.
- Serve topped with more chives.
