These oat bars are a flavorful twist on no bake oatmeal bars. I have made different variations on this using peanut and almond butter, but this one is by far our favorite. They are a perfect snack or on the go breakfast. They are simple to make and don’t require any baking! “Now you’re talking in my good ear” as my brother would say.
You Will Need:
- 2 ½ cups rolled oats
- 12 ounces Justin’s Maple Cashew Nut butter
- ½ cup Maple Syrup
- 1 teaspoon vanilla extract or vanilla bean paste
- Optional – 1 tablespoon chia seeds
- Optional – 2 tablespoons sliced almonds or chocolate chips for topping (or a combo)
Instructions:
- Line an 8”x8” pan with parchment paper.
- Put the oats and chia seeds (if using) in a large mixing bowl.
- Melt the cashew butter in a glass measuring cup in the microwave in 45 second increments, stirring after each 45 seconds.
- Once the cashew butter is completely melted, stir in the maple syrup and vanilla.
- Pour the mixture over the oats and stir to combine until the mixture is uniform.
- Press into the prepared pan in an even layer. Sprinkle the sliced almonds (and/or chocolate chips) over the top, cover with a layer of plastic wrap, then gently press the almonds into the top.
- Place the pan in the fridge to cool until set (for at least 2 hours). Cut into squares.
