These meatloaf and mashed potato bites are the ultimate comfort-food appetizer and a delicious way to turn leftovers into something special. I was inspired after traveling with friends in Texas when we stopped at a fun local restaurant for lunch. A couple of them had been there before and insisted we order the meatloaf appetizer. I probably would have overlooked this item on the menu, but I am so glad we had them! This bite-sized appetizer combines savory meatloaf, creamy mashed potatoes, a tangy touch of ketchup, and a fresh oniony finish… in one perfect bite. What’s not to like?

This recipe is more about the method than precise measurements, making it easy to scale up or down depending on how many people you’re feeding. It’s also a great way to use up leftovers, which makes it both easy and budget-friendly. I love serving hearty, filling appetizers like this during the holidays especially when the cocktails are flowing and everyone’s looking for something satisfying to snack on to balance out the alcohol. You Will Need:

  • 2 slices of meatloaf, about 1 inch thick
  • About a cup of mashed potatoes
  • About ¼ cup of ketchup
  • Green onions, for topping
  • Parsley, for garnish

Instructions:

  • Slice the green onions and stem and chop the parsley leaves, set aside.
  • Cut the meatloaf into 12 bite sized cubes. Place the cubes into skillet over medium high heat, turning occasionally, until browned and heated through.
  • Meanwhile, warm the mashed potatoes in the microwave until hot.
  • Place heaping tablespoons of mashed potatoes onto a serving platter. I like THIS scoop for this job to make each bite the same size.
  • Place a hot meatloaf cube on top of each potato scoop and gently press.
  • Put a small amount of ketchup on each meatloaf cube and top with a piece of green onion.
  • Garnish with parsley and serve.
