This easy no bake dessert bar is made for those who LOVE peanut butter cups. You know the ones. I prefer the white chocolate variety, so that is what I use here. You can use either creamy or crunchy peanut butter in the filling – whatever floats your boat. I’m on team crunchy. This recipe is great for summer since no oven is required and they are a sweet treat to share at a barbecue or picnic. If you like dark or milk chocolate, swap the amounts for white and dark chocolate to make a dark chocolate with white drizzle bar. Either way, just make them.

You Will Need:

Crust:

  • 1 ½ cups chocolate graham cracker crumbs
  • 1/3 cup butter, melted
  • 2 tablespoons sugar
  • ½ teaspoon kosher salt

Filling:

  • 1 cup graham cracker crumbs
  • ¾ cup powdered sugar
  • 4 tablespoons butter, melted
  • 1/3 cup peanut butter

Topping:

  • ¾ cup chopped white chocolate
  • ½ teaspoon coconut oil
  • 2 tablespoons chopped dark chocolate

Instructions:

  • Make the crust – place the graham cracker crumbs, sugar, and salt into the bowl of a food processor. Drizzle in the butter while pulsing until the mixture looks like wet sand. Press firmly into a 9×9” pan lined with a parchment paper sling (for easy removal). I use the bottom of a glass to press evenly. Place pan in the fridge to let the crust set.
  • Meanwhile, make the peanut butter filling – place the graham cracker crumbs, powdered sugar, peanut butter, and melted butter into the bowl of a stand mixer. Mix using the paddle attachment until the mixture is uniform. Press the filling on top of the prepared crust. Place in the fridge to set for about an hour.
  • Melt the white chocolate with coconut oil over a double boiler. Spread over the top of the peanut butter mixture. Return to the fridge to set for another hour.
  • Melt the dark chocolate using the same method. Dip a spoon into the chocolate and drizzle over the top. Let set in the fridge for a little longer.
  • Bring bars to room temp before cutting into squares.
