Birthday Cake Ice Cream

My little boy LOVES ice cream.  What kid (or adult) doesn’t really?  It’s delicious, happy, and refreshing on a warm summer day.  What I didn’t know until recently is that ice cream is a serious mom negotiating tool.  Wow, I can get my son to cooperate and do almost anything if there is ice cream involved.  Luckily, he enjoys helping me cook and is very curious to see how all kitchen tools and appliances work.  So not only is ice cream a great reward, but it’s also an activity. 

We have been making very simple ice creams without eggs or making custard, as he doesn’t have the attention span for that at this point.  He wants to pour and whisk the mixture then watch the ice cream maker churn.  Since we’ve been experimenting with ice cream, we have tried several flavors.  This one is certainly my son’s favorite – particularly when we put the sprinkles in it, not just on top!  Life according to my son: sprinkles = pure joy.

You Will Need:

  • 1 Cup Milk
  • ¾ Cup granulated sugar 
  • 1 cup white cake mix
  • 2 teaspoons vanilla bean paste
  • 2 cups heavy cream
  • Pinch kosher salt
  • ½ Cup Rainbow Sprinkles, plus more for topping

Instructions:

  • Whisk together sugar, salt and cake batter mix. 
  • Add milk and vanilla, whisk for about 2 minutes then whisk in the cream. 
  • Refrigerate for 1 hour.  Churn in ice cream maker following the manufacturer’s instructions. 
  • Add sprinkles and fold in after churning, if using. 
  • It will be the consistency of soft serve straight from the machine but will freeze harder.
  • Top with more sprinkles.
